Without a doubt this is my favorite take on tuna! Prepare your tastebuds for a cacophony of perfectly matched flavors. As the tuna is served raw in this recipe, make sure you buy good quality, sushi-grade fish. Top with the lime juice right at the last minute as otherwise it starts to ‘cook’ the fish.

Stefan's Malibu Tuna Tower

Serves 4

1 lb (450g) fresh ahi tuna
1 avocado, chopped
1 thumb sized piece of ginger, peeled and grated
1 handful cilantro (coriander) leaves, stalks removed
4 cloves garlic, minced
4 scallions, chopped
2 tbsp olive oil
1 lemon, zested
1 lime, zested
Pinch cayenne pepper
Salt and pepper

TO GARNISH:
Cilantro (coriander) seeds



Step 1

Slice the tuna into small squares, then de-stone and peel the avocado and cut into the same sized pieces.

Step 2

Place the tuna and avocado in a bowl and add in the rest of the ingredients. Use only the lemon and lime zest. Stir well and refrigerate until needed.

Step 3

To shape, pile the tuna and avocado mixture into a food ring and squeeze over a little lime juice just before serving. Remove the ring and garnish with cilantro seeds and a slice of lemon.
